Sponge Cake with Icing





INGREDIENTS:

  • 4 eggs
  • 1 glass of sugar
  • 4 tbsp mayonnaise
  • 1 pack of custard(pudding) in powder (I always use Polish one but I'm sure difeerent one will be good as well)

  • 1 vanilla sugar (I'm using this one from Polish shop)

  • 2tsp baking powder

  • olive oil 
  • crumbs( I use Polish crumbs)


LEMON ICING:
  • 150 g caster sugar
  • juice from 1-1.5 lemon









DIRECTIONS:
  1. 1. Whip eggs with sugar to make a fluffy foam,add carefully mayo,flour mixed with baking powder,custard in powder and vanilla sugar. If mass is too thick add 2tbs of oil.
  1. Pour out dough into a baking tray which is previously spreaded with olive oil and crumbs. Bake for 50 min in oven preheated to 180C.
  2. Make an icing. Melt caster sugar with lemon juice in a small pot and spread it on cold sponge cake.
